Weeknight Tex Mex Skillet

Directions
Ingredients:
- 1lb Grass Powered Ground Beef (any ground meat works here, chorizo sausage is amazing too!)
- 1 medium onion, diced
- 1 bell pepper, diced
- 1-2 cloves garlic, minced
- 1 packet taco seasoning (we like Siete brand if I'm out of homemade)
- 1 package Grass Powered bone broth (any kind words, it all ends up tasting the same)
- 1 cup Jasmine rice (I've never used instant, adjust as needed if that's what you have!)
- 1 can black beans
- 1 can diced tomatoes, or 1-2 fresh tomatoes diced
- shredded cheese, creme fraiche, cilantro, avocado, tortilla chips, etc for serving
- Brown ground meat with onions and peppers in a cast iron skillet or dutch oven.
- Once the meat is almost cooked through, add the garlic.
- Add in the taco seasoning, rice, brown, black beans and tomatoes.
- Cover and simmer for around 20 minutes or until the rice is soft and most of the liquid has been absorbed.
- Stir a few times during this cook time. If you feel like it needs more liquid, add water. If it seems to have extra liquid simmer with the lid off for a few minutes.
- Serve with all your favorite taco or nacho toppings! We typically like to add cheese, creme fraiche, cilantro and tortilla chips for some crunch.
Note - this recipe works well with all kinds of ground meats! Substitute chicken, pork, turkey. Our chicken chipotle sausage works great in this recipe, and we have chicken, pork and beef chorizo that adds a little extra kick too!
